Regarding your second query, you can find official estimates on the proportion of the population who have received a first, second and third dose of a COVID-19 vaccine on the Government coronavirus (COVID-19) dashboard, along with the total number of vaccines given. Population estimates for the United Kingdom can be found under the heading latest reported vaccination uptake in the 4th chart down the page. If you are interested in the estimates of vaccine uptake for each nation or region in the UK, click Vaccinations in United Kingdom in the top-left banner, you can then select the area type and area name as required. Please note, once the dashboard is adjusted for each nation or region the "latest reported vaccination uptake" chart displays as the 2nd chart down the page.  

More information on official government vaccination estimates can be found in UKHSA's COVID-19 weekly announced vaccinations reports. To accurately calculate a proportion of nation that are unvaccinated, data regarding the size of the population is required. As it is not possible to know exactly how many people are in the United Kingdom, population estimates (denominators) are used. Because of this, it is difficult to identify exactly how many people in the population are unvaccinated. Please find more about the denominators used under the data notes section of the same link. The Office for National Statistics COVID-19 Infection Survey (CIS) is a household survey that estimates the number of people testing positive for infection and for antibodies in the UK. Our statistics refer to the number of current COVID-19 infections within the population living in private residential households. We exclude those in hospitals, care homes and/or other communal establishments. In communal establishments, rates of COVID-19 infection are likely to be different. We do not hold analyses on the proportion of people who are unvaccinated in the United Kingdom.

However, you might be interested in our modelled estimates of the proportion of adults who have received one or more vaccination doses in England, Wales, Northern Ireland, and Scotland we previously produced. The last publication containing the estimates was our Coronavirus (COVID-19) Infection Survey, antibody and vaccination data, UK: 8 December 2021 bulletin. In tabs 1e, 2d, 3d and 4d of the dataset you can find vaccination estimates for England, Wales, Northern Ireland, and Scotland, respectively. These estimates are based on the percentages of participants vaccinated in our Covid Infection Survey and do not replace the official government figures from UKHSA on vaccinations. Please note, caution should be taken when interpreting these results as we did not attempt to estimate the proportion of participants who were unvaccinated.

Regarding your third query, we do not hold data related to vaccine injuries.

We do, however, hold data on the number of deaths due to and involving the COVID-19 vaccine. Our data is derived from the death certificate, using information received at the point of death registration.  For the vaccine to be mentioned on the death certificate the medical professional certifying the death must have believed, to the best of their knowledge, that the vaccine was part of the events that led to the death. Deaths reported as due to or involving the COVID-19 vaccination are recorded using ICD-10 code U12.9.
