I would like to use the FOI to inquire whether data exists on the number of non-standard housing in the UK.
Included in this, I'd ideally like the percentage of UK households that are classified as non-standard or non-traditional.

We do not use "non-standard" or "non-traditional" in the classifications that we use for housing (buildings and dwellings that people live in) or for households (the people that live in the housing). As your request references both housing and households, we have provided some information relating to both, which may help answer your question.
It is important to note that housing is a devolved power and so statistics are not always available at UK level.
For housing:
the English Housing Survey gives information on housing stock in England; queries should be directed to MHCLG ehs@communities.gov.uk
the About the Scottish Household Survey gives information about the Scottish Household Survey, which provides evidence on the characteristics, attitudes and behaviour of private households and individuals, as well as on the physical condition of Scotland's homes; more general Housing statistics for Scotland are also available
the Welsh Housing Conditions Survey gives information on housing in Wales, with a focus on the condition of the housing stock
