I would like to know the numbers and percentage of gun and knife crime convictions by age, gender, ethnicity and religion between the year 2000 and present.

We do not hold data or produce statistics for gun and knife crime convictions.
We produce figures on the levels and trends of crime in England and Wales primarily based on two sets of crime statistics: the Crime Survey for England and Wales (CSEW) and police recorded crime (PRC) data provided by the Home Office. Neither of these data sources collect information on numbers of convictions.
Data on convictions and prosecutions in England and Wales are recorded and held by the Ministry of Justice. They publish court statistics on a quarterly basis.
