I would like to request some estimates from the 1991 census.
Please provide the population estimates by wards (particularly Lambeth and Southwark wards) and age for different genders and ethnic groups.

The information you requested is available for 1991 frozen wards from the Nomis website:
From the Nomis homepage https://www.nomisweb.co.uk/ select 'Query data' from the 'Data Downloads' box.
Select '1991 census - local base statistics'
Select 'Cell'
Select 'L06 Ethnic group'
You may now choose the fields of interest to you, or select the 'tick all' box.
Now select 'Geography'
Select 'select areas within' from the main toolbar
Choose '1991 frozen wards' from the drop down for 'select type of area'
Choose 'pre-1996 local authority districts' from the drop down for 'select all areas within'
Select 'London' and then tick the boroughs you are interested in (e.g. Lambeth)
You can now use the 'Format / Layout' option should you wish
Select 'Download Data'
