I would like to make a freedom of information request relating to data on defendants and offenders of sexual offences 2024-2025, with data on the defendants/offenders by ethnic group and offence type.

We do not hold the data you have requested. Our publications and data concern crime as it is experienced by victims, or as it is recorded by police.
We do however publish data on the characteristics of perpetrators (as reported by victims) in tables 1 to 4 of our Nature of sexual assault by rape or penetration, England and Wales dataset. This includes data on victim-perpetrator relationships, perpetrator age and sex. This data is collected as part of a rotating survey module and the latest data available is for the YE March 2020. We plan to update this dataset later this year.
The Ministry of Justice (MoJ) are primarily responsible for data on offenders. They publish Statistics each quarter which may be of help. You may also find the MoJ's outcomes by offence data tool: June 2024 useful. It allows you to filter by various categories including; offence group, ethnicity and other breakdowns to find the convictions and sentenced numbers.
