For questions 1 and 2 Census 2021 is currently our best estimate of the population of England and Wales by country of birth. The attached dataset provides country of birth by sex and main language for all usual residents in England and Wales for those born in Central and South America. Some of the countries you are interested in are not included separately (Costa Rica, El Salvador, Guatemala, Honduras, Nicaragua, Panama and Puerto Rico).

Costa Rica , El Salvador, Guatemala, Honduras, Nicaragua, Panama are all in Other Central America and Puerto Rico is in Other Caribbean.
